Ingredients:

Salad: •Einkorn berries •Spring mix •Radicchio •Shallot •Oranges Mustard Vinaigrette Maple-Candied Pecans and Pumpkin Seeds

1. Mix the Dry Ingredients

Cook a cup of einkorn berries over a stovetop with 1 ¾ cup of water. Bring to a boil, reduce heat to low, and cover for 40-45 minutes until al dente.

2. Make the Vinaigrette

Meanwhile, make the mustard vinaigrette by combining the dressing ingredients in a small jar and shaking.

In a small skillet, toast the pecans and pumpkin seeds. Add the fennel seeds and pour in maple syrup to coat. Remove from the heat and let cool into sticky clusters.
