How to Make Sourdough Rye Sandwich Bread

Ingredients:

•Bread flour •Rye flour (I use medium rye flour) •Water •Caraway seeds, toasted •Sourdough starter •Molasses •Salt

1. Make the Rye Yudane

Yudane is a Japanese roux method of making extra soft breads. Mix rye flour and boiling water together in a bowl and cool.

2. Mix the Rye Dough

Mix the bread flour, more rye flour, water, molasses, toasted caraway seeds, and yudane in the bowl of a stand mixer fitted with the dough hook attachment.

3. Bulk Fermentation

Place the dough in a bowl in a warm location and proof until doubled in size. Proof in the refrigerator overnight.

4. Shape and Proof

Punch down the dough, shape into a log, and place in a bread loaf pan. Proof until doubled in size and it reaches the top of the pan.

5. Bake

Brush the top with an egg wash and more caraway seeds. Bake until golden brown and the internal temperature reads 200ºF.
