How to Make Sourdough Pop Tarts

Learn how to make these colorful  and flaky Sourdough Pop Tarts made with sourdough rough puff pastry!

 Ingredients:

•All-purpose flour •Salt •Unsalted Butter •Ice Water •Sourdough Discard •Fruit Jam •Powdered Sugar •Egg, for egg wash •Whole Milk •Rainbow Sprinkles

1. Make the Sourdough Rough Puff Pastry Dough

Mix the flour, salt, unsalted butter cubes, ice water, and sourdough discard in a mixing bowl until clumps form.

2. Chill the Dough

Bring together on a clean work surface, divide in half, and wrap in plastic wrap. Refrigerate for at least an hour.

3. Roll and Fold the Dough

Use a rolling pin to roll out the dough into a long rectangle. Fold it like a business letter, rotate, and fold out. Chill and repeat these sets twice more.

This folding process mimics making puff pastry and creates dozens of flaky layers that will rise in the oven!

4. Shape

Roll out into a large rectangle, trim the edges, and cut into 8 smaller rectangles. Chill and repeat with the other slab of dough.

5. Fill with Jam

Brush the edges of half of the rectangles with egg wash and fill with a couple of TBS of fruit jam. Place the others on top and seal with the tines of a fork.

6. Bake

Preheat the oven to 375ºF (191ºC), brush with an egg wash, and sprinkle with optional raw sugar. Bake for 20-22 minutes until golden brown.

7. Make Jam Glaze

As the sourdough pop tarts cool, make the jam glazes. Mix the powdered sugar, milk, and jam in a small bowl until thick.

8. Assemble

Pour the glaze on top of the pop tarts and sprinkle the tops with rainbow sprinkles. Let sit for 15 minutes until the glaze hardens some.
