Ingredients:

•All-Purpose Flour •Cornmeal •Salt •Baking Powder •Baking Soda •Buttermilk •Eggs •Sourdough Discard (or active starter) •Honey •A neutral oil like vegetable, canola, or coconut.

1. Mix the Dry Ingredients

In a large bowl, mix together the flour, cornmeal, baking powder, baking soda, and salt. Set aside.

2. Whisk the Wet Ingredients

In another bowl, whisk the eggs, honey, sourdough, buttermilk, and together. Drizzle the oil in last so it emulsifies better.

3. Mix the Sourdough Corn Muffin Batter

Pour the wet ingredients into the bowl of dry ingredients and mix until the flour is hydrated. Set it aside to rest for 10-15 minutes as you preheat the oven.

4. Bake

Preheat the oven to 400ºF (204ºC) and prepare a muffin pan with liners. Fill the muffin cups up 75%. Bake for 15-17 minutes.
