How to Make  Sourdough Peanut Butter Cookies

Ingredients:

•All-purpose flour •Salt •Baking powder & soda •Unsalted butter •Peanut butter •Light brown sugar •Granulated sugar •Sourdough discard •Vanilla extract •Chocolate (for dip) •Coconut oil (for dip)

1. Mix the Dry Ingredients

Mix the flour, salt, baking soda, and baking powder together in a small bowl and set aside.

2. Mix the Wet Ingredients

In the bowl of a stand mixer (or with hand mixer), mix room temp butter, light brown sugar, granulated sugar, and peanut butter together until pale and creamy.

3. Mix the Peanut Butter Cookie Dough

Add the dry ingredients and mix just until there are no dry spots of flour remaining. Cover and chill the dough for at least an hour.

4. Portion Out the Cookies

Line two baking sheets with parchment paper. Use a cookie scoop or spoon to portion out 24 cookies and set them a couple inches apart on the sheets.

5. Make Crisscross Patters

Preheat the oven to 350ºF (177ºC). Flatten the cookies slightly and then use the tines of a fork or small wooden dowels to make crisscross or hash patterns on the cookies.

6. Bake

Bake for 15-17 minutes or until the cookies are slightly golden brown on the edges. Cool completely.

7. Dip in Chocolate (optional)

Melt and mix chocolate and coconut oil in a bowl and dip the cookies in the chocolate. Let the cookies cool to set.
