Boiled Apple Cider

Boiled apple cider is concentrated apple cider that has the consistency of honey. This key ingredient acts as a caramel for this gooey cake topping!

How to Make Boiled Apple Cider

Boiled apple cider is easy to make! Boil a half gallon of apple cider down to 1 cup. This can take a few hours, but will last indefinitely.

1. Prep Cake Pan

•Butter or grease a 9-inch cake pan. •Cut out a piece of parchment to fit the bottom of the pan.

Apple Cider Caramel Topping Ingredients

•2 apples •½ cup boiled apple cider •3 TBSP butter •2 tsp red miso (optional, for a salted caramel-like effect) •½ tsp vanilla extract

2. Slice Apples

•Slice the apples into ¼ inch slices. •Arrange the apples in the bottom of the cake pan in a geometric design.

3. Make Apple Cider Caramel Topping

•Add the apple cider caramel ingredients to a saucepan and cook until bubbling. •Pour on top of the apples. •Refrigerate the pan until the topping is set.

Dry Ingredients

•1 ½ cups cake flour •½ tsp salt •1 tsp baking powder •½ tsp baking soda •1 tsp cinnamon •¼ tsp ground ginger •⅛ tsp ground cloves

4. Mix Dry Ingredients

•Mix the dry ingredients in a medium-sized bowl. •Set aside while you mix the wet ingredients.

Wet Ingredients

•¾ cup sourdough starter •¾ cup neutral oil •½ cup buttermilk •1 cup dark brown sugar •2 eggs •1 ½ tsp vanilla extract

5. Mix Wet Ingredients and Make Cake Batter

•Mix the wet ingredients. •Add the dry ingredients to the wet ingredients and mix. •Pour onto the set apple cider topping.

6. Bake

•Bake the cake at 350ºF (177ºC) for 40 minutes until a toothpick inserted comes out clean. •Cool on a wire rack for 10 minutes.

7. Turn Upside-Down

•After 10 minutes, run a butter knife around the edges of the cake. •Place a serving platter on top of the cake and quickly turn it upside-down to reveal!

The apple cider upside-down cake will keep for a few days at room temperature or refrigerated. It's excellent with ice cream or whipped cream.
