How to Make a Sourdough Challah

Ingredients Needed

1. Bread Flour 2. Water 3. Sourdough Starter 4. Eggs 5. Neutral Oil 6. Granulated Sugar 7. Salt 8. Seeds for topping

Mix Dry Ingredients

1. Mix together the bread flour, sugar, and salt.

Mix Wet Ingredients

2. Separately, mix together the sourdough starter, oil, water, two eggs and egg yolk.

Mix Together

3. Mix together the wet & dry ingredients until it comes together into a shaggy dough.

Knead

4. Knead the dough until it is smooth and can pass the windowpane test.

Bulk Fermentation

6. Place dough in a bowl to proof/ferment until it is doubled in size.

Overnight Proof

7. Once dough is doubled, place in refrigerator overnight.

Degas & Shape

8. The next day, remove dough from fridge. Punch down the dough, divide into four pieces, and roll into four strands.

Braiding

10. Place the braided challah on a pan and proof in a warm place until doubled in size and feels full of air.

Egg Wash & Topping

11. Preheat oven to 350ºF. Brush challah with egg wash and sprinkle with seeds.

12. Bake the challah for about 40 minutes.
