Tip 1: Use Real Pumpkin Puree

Real pumpkin puree (not pumpkin pie filling) adds color, moisture, and pumpkin flavor to the muffins. Libby's 100% pumpkin is my preferred brand.

2. Use Pumpkin Pie Spices or Make Your Own

These muffins can be made with pumpkin pie spice or you can make a melange of your favorite warming spices. The amount doesn't overpower the muffins at all!

3. Don't Overmix the Batter

Overmixing leads to gluten development and a tougher muffin. There's no need to use a mixer. Just whisk the batter together until the flour is hydrated.

4. Pipe in the Cream Cheese Filling

You can spoon the cream cheese filling on top, but piping it in helps to get more filling in the middle of the muffins. That way, there's cream cheese in each bite!

5. Top with Pumpkin Seeds for Crunch

Sprinkle pumpkin seeds or pepitas on top of the muffins. The pumpkin seeds give a slight crunch to the muffins and add a nice decoration, without being too fussy.

6. Grease the Muffin Liners and Pan Well

Before baking, be sure to line your muffin pan with muffin liners or tins and grease them well or spray with non-stick spray. That way, the muffins won't stick to the pans.
