How to Make  Sourdough Strawberry Scones

Ingredients:

1. Mix Dry Ingredients

Rub the lemon zest into the sugar. Then, mix all of the dry ingredients together in a large bowl.

2. Cut in the Butter and Strawberries

Cut the cold butter into small cubes, toss into the flour, and break apart the pieces into smaller than peas. Add the sliced strawberries.

3. Whisk the Wet Ingredients

In a large measuring cup or another mixing bowl, whisk together the egg yolk, vanilla, sourdough discard, and heavy cream.

4. Mix the Scone Dough

Pour the wet ingredients into the dry, and toss with a fork until you have large clumps of scone dough. It'll still be scraggly and floury.

5. Shape the Scones

Dump the dough out onto a countertop, form into a mass, cut into quarters, and stack on top of each other. Press down and repeat.

6. Cut Out the Scones

Cut the scones into 8 wedges. Place on a baking sheet lined with parchment paper and freeze while you preheat the oven.

7. Bake

Preheat oven to 425ºF (218ºC). Brush tops with cream and a sprinkle of sugar. Then, lower to 400ºF (204ºC) and bake for 21-23 minutes or until the scones are dark golden brown.

8. Make the Strawberry Glaze

To make the strawberry glaze, pulverize freeze-dried strawberries into a powder and mix with powdered sugar and heavy cream. Drizzle on top of the scones!
