This easy Sourdough Banana Bread uses five bananas and warming chai spices for the most delicious treat! You can use active sourdough starter or sourdough discard for this banana bread recipe.
Preheat oven to 350ºF (177ºC).Prepare the interior of a bread loaf pan with butter or oil. Line the pan with a piece of parchment paper that fits the length of the pan and has a couple of inches overhang on the sides. Oil the parchment paper and set aside.
Mix together the dry ingredients in a large mixing bowl. Set aside.
In another large mixing bowl, mash four very ripe bananas with a fork.Whisk in the wet ingredients until thoroughly combined. It's okay if the mixture is still lumpy.
4 Bananas, 2 Eggs, ½ cup Sourdough Starter, ½ cup Light Brown Sugar, 6 TBS Unsalted Butter, 1 tsp Vanilla Extract, ¼ cup Refined coconut oil
Create a well in the center of the dry ingredients and pour in the mixed wet ingredients. Mix the batter together until no dry pockets remain.Optional: At this point, you can fold in ½ cup of add-ins like nuts or chocolate chips.
Pour the banana bread batter into the prepared bread loaf pan.Optional topping: Slice one banana lengthwise and place it cut-side up on top of the batter. Sprinkle the top with a TBS of demerara or raw sugar.Bake the banana bread at 350ºF (177ºC) for 55-65 minutes until the top is dark brown, a toothpick inserted in the middle comes out clean, and the internal temperature reads 200ºF (93ºC).Let cool on a wire rack.Slice and enjoy!
